Cover crops have become one of the defining features of sustainable viticulture. They reduce soil erosion, increase soil organic matter, improve biodiversity and enhance soil structure. But in warm, Mediterranean climates, they also create one of the industry’s biggest management dilemmas.
How do you capture the environmental benefits of cover crops without sacrificing vine performance through increased competition for water?
A new three-year study conducted across commercial vineyards in southern France has provided one of the clearest answers yet: it’s not whether you use cover crops that matters most—it’s how and when you terminate them.
The Cover Crop Challenge
Service crops, often referred to as cover crops, are planted primarily to provide ecosystem services rather than produce a commercial harvest.
Their benefits include:
Reducing soil erosion
Increasing organic matter
Improving soil structure
Supporting biodiversity
Enhancing winter rainfall infiltration
Suppressing weeds
However, every one of those benefits comes with a potential cost.
During spring and early summer, actively growing cover crops are competing with grapevines for two critical resources:
Water
Nitrogen
In regions where rainfall is limited and summer drought is common, this competition can directly influence vine growth, yield and ultimately fruit quality.
The Study
Researchers monitored seven commercial vineyards across the French Mediterranean wine regions of Hérault, Aude and Pyrénées-Orientales over three growing seasons between two thousand and twenty-two and two thousand and twenty-four.
The study compared four different vineyard floor management strategies:
Early termination at budburst using mowing followed by shallow tillage
Early termination using roller-crimping
Late termination approximately one month after budburst
A conventional tilled control
Throughout the trial researchers measured:
Cover crop biomass
Soil surface temperature
Soil water potential
Vine water status
Vine vigour
Yield components
Berry composition
Must chemistry including yeast assimilable nitrogen, sugar and pH
The result was one of the most comprehensive on-farm evaluations of cover crop termination conducted under Mediterranean vineyard conditions.
Early Termination Delivered the Best Balance
The standout result was clear.
Terminating cover crops at budburst using shallow tillage consistently preserved vine performance.
Compared with later termination strategies, vines maintained:
Higher vigour
Similar yields to conventional cultivation
Reduced water stress
Stable berry composition
Importantly, this strategy did not increase berry sugar concentration, suggesting it is unlikely to contribute to rising alcohol levels under warmer growing conditions.
Delaying Termination Increased Competition
Later termination told a different story.
Allowing cover crops to continue growing deeper into spring created greater competition exactly when vines were beginning rapid shoot growth and berry development.
Researchers observed:
Greater soil water depletion
Higher vine water stress
Reduced berry weight
Fewer bunches per vine
Lower vine vigour
Reduced overall yield
Although later termination provided some environmental advantages—including cooler soil temperatures and improved winter water infiltration—the increased competition outweighed these benefits during dry growing seasons.
There Is No Universal Solution
One of the study’s most important conclusions is that vineyard floor management should never be considered a “one-size-fits-all” practice.
The researchers caution that their findings apply specifically to Mediterranean environments characterised by:
Dry summers
Limited soil moisture
Moderate to low water-holding capacity
Different climates may produce different outcomes.
For example, vineyards in cooler or wetter regions may experience far less competition from cover crops, allowing growers to maximise ecological benefits without negatively affecting vine performance.
The Importance of On-Farm Research
A particularly valuable aspect of this project was its collaborative design.
Rather than being conducted solely at research stations, the work took place on commercial vineyards with winegrowers actively involved in designing and refining management practices.
This participatory approach allowed researchers to generate findings that reflect real-world vineyard conditions while giving growers immediate feedback on how different strategies performed on their own properties.
The project demonstrates how collaboration between researchers and winegrowers can accelerate the adoption of practical, climate-resilient management systems.
